Sugar Cookies:
- ½ cup (1 stick) unsalted butter, softened
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ¼ tsp salt
- 1½ tsp baking powder
- Preheat oven to 350°F.
- Cream together butter and sugar until light and fluffy.
- Add egg and vanilla and mix until combined.
- Add the remaining dry ingredients and mix until just combined. Your dough will come together into big chunks; dump it out and use your hands to form one ball of dough.
- On a floured surface, roll the dough to about ¼ inch thickness and cut into desired shapes. Place cookies on a baking sheet lined with parchment paper, placing cookies an inch apart.
- Bake for 9-12 minutes, until cookies are juuust starting to brown at the edges. Let cookies cool completely before decorating (see Note below).
- Yield: 15 large cookies
Note: I use the Wilton royal icing recipe to decorate my cookies and I highly recommend! The sky is truly the limit when it comes to how you can decorate sugar cookies- they’re the perfect blank canvas 🙂
