Espresso Chocolate Chip Cookies

Espresso Chocolate Chip Cookies:

  • 1 cup (2 sticks) unsalted butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 3 egg yolks
  • 2 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ tbsp ground espresso powder
  • 1 ¼ cup semisweet chocolate chips
  • 1 ¼ cup white chocolate chips
  1. Preheat oven to 350°F.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and sugars until light and fluffy.
  3. Add egg yolks and vanilla extract and beat to combine.
  4. Add the dry ingredients and mix until almost all the flour is mixed in, then add the chocolate chips and continue beating just until combined.
  5. Scoop cookies (~2tbsp scoops) onto cookie sheets lined with parchment paper.
  6. Bake for ~14 minutes.
  7. Yield: 36 cookies
