Apple Upside Down Bread

Apple Upside Down Bread:

  • ¼ cup unsalted butter, melted
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • 1 medium apple, chopped
  • 1 egg
  • 1 cup sugar
  • ½ cup canola oil
  • 2 tbsp milk
  • 1 ½ tsp vanilla extract
  • ⅔ cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  1. Preheat oven to 350°F. Spray a loaf pan with cooking spray, then line with parchment paper, and spray the parchment paper (you really don’t want this to stick!)
  2. In the bottom of your lined pan, spread melted butter and sprinkle with brown sugar and ½ tsp cinnamon. Gently mix to combine and ensure that the entire bottom of the pan is covered. Spread your chopped apple pieces on top of this butter mixture and set aside.
  3. In a large bowl, combine egg, sugar, oil, milk, vanilla, and applesauce.
  4. Add the dry ingredients to the wet ingredient mixture and mix to combine.
  5. Pour the batter into the loaf pan, on top of the apples.
  6. Bake for ~55 mins, until a toothpick inserted into the loaf comes out clean.
  7. Remove from oven and let sit for a few minutes, then turn the loaf out onto a plate. Place the plate on top of your pan and quickly flip. Your loaf should come out cleanly because of the parchment and cooking spray, but you can run a knife along the edges of the pan if it looks like its going to stick.
  8. Yield: 1 beautiful loaf 🙂

When I was a kid, the drive to go apple picking felt like a real journey. It took forever, we stopped for food along the way, played a million games in the car, and finally we arrived at an orchard to pick buckets full of apples. In reality, the drive was about an hour and we picked way more apples than we could possibly use (when four kids are picking apples for the same house, you quickly fill your trunk with the harvest).

This year, I went apple picking in the grocery store instead of out in an orchard (group activities aren’t really my thing right now), but I still loaded up my fridge with fruit. I am a full-on, basic, 20-something, Pinterest-loving girl when it comes to fall, and I cannot wait for sweater weather, apple cider, and all things pumpkin (although I’ve never actually had a PSL).

I have an ever-growing list of apple treats I can’t wait to make and 13 pounds of apples burning a hole in my fridge, so get ready for this content 😉

  1. Apples in the fridge? Only argument I have. The recipe looks fangtabulous. I will bargain with the Boss to get her to make it this weekend. Wonder how much this is gonna cost me? (I’m not allowed to play serious with the oven. Grill, yes. Oven, no.)
