Sprinkle Sugar Cookies

Sprinkle Sugar Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup (4 oz) cream cheese, softened
  • 1 ½ cups sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup rainbow sprinkles
  1. Preheat oven to 350°F.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter, cream cheese, and sugar until light and fluffy.
  3. Add the eggs and vanilla and beat on low speed until well combined.
  4. Add the flour, baking powder, and salt.
  5. When dough comes together, add the sprinkles and mix just until they’re distributed throughout.
  6. Scoop cookies and place them 2 inches apart on a cookie sheet lined with parchment paper.
  7. Bake for ~13 minutes.
  8. Yield: 40 cookies.

My birthday cake request every year is Funfetti cake with Rainbow Chip icing- nature’s perfect food. The desire to have that deliciousness in cookie form led to these beauties.

Last year, I told one of my classmates that I think Funfetti is the best cake flavor, and she said that FUNFETTI IS NOT A FLAVOR!! Apparently, the addition of sprinkles does not change the fact that it is vanilla cake.

But I whole heartedly disagree! Funfetti is so much more than sprinkles- its flavor is birthday cake and it’s made with the essence of joy!

So…I need your opinion. Is Funfetti its own flavor, or just fancy vanilla?

(Still friends despite this sprinkle-based debate)
