Grilled Pineapple

Grilled Pineapple:

  • 1 pineapple
  • 3 tbsp of lime juice
  • ¼ cup honey
  • ¼ cup coconut flakes
  • Whipped cream
  1. Prep the pineapple- Cut off the outside skin (is it called a skin?) of the pineapple.  Then slice into rings, about half an inch thick.
  2. Put the pineapple slices in a bowl and cover with water, then add the lime juice and honey.
  3. Cover the bowl, give it a gentle shake to combine everything and let sit in the fridge for about 4 hours.
  4. Toast your coconut- put the flakes in a pan and heat over medium heat until browned and toasty. Stay close and keep stirring to make sure they don’t burn!
  5. Heat your grill (to about medium-high heat) and remove the pineapple slices from the water.
  6. Grill pineapple for 5-8 minutes per side, waiting till you get nice grill marks on the fruit.
  7. Serve with whipped cream and toasted coconut!
