Grilled Pineapple:
- 1 pineapple
- 3 tbsp of lime juice
- ¼ cup honey
- ¼ cup coconut flakes
- Whipped cream
- Prep the pineapple- Cut off the outside skin (is it called a skin?) of the pineapple. Then slice into rings, about half an inch thick.
- Put the pineapple slices in a bowl and cover with water, then add the lime juice and honey.
- Cover the bowl, give it a gentle shake to combine everything and let sit in the fridge for about 4 hours.
- Toast your coconut- put the flakes in a pan and heat over medium heat until browned and toasty. Stay close and keep stirring to make sure they don’t burn!
- Heat your grill (to about medium-high heat) and remove the pineapple slices from the water.
- Grill pineapple for 5-8 minutes per side, waiting till you get nice grill marks on the fruit.
- Serve with whipped cream and toasted coconut!
